
There are two things I have learned throughout my career: standards matter, and people remember how you make them feel.
Those principles have shaped my life in the Royal Marines, my 15 years as a head chef, and now my work as the founder of The Gourmet Nomads. They are also the reason I believe professional catering is about far more than simply putting food on a plate.
It is about preparation, discipline, reliability and pride in the finished result.
Whether we are supporting a care home, stepping into a busy restaurant kitchen, providing a relief chef for a pub, delivering contract catering or preparing food for a private event, the approach remains the same: understand what is needed, take responsibility and deliver properly.

The discipline I learned as a Royal Marine
My time as a Royal Marine taught me lessons that have stayed with me throughout my professional life.
Discipline is often misunderstood. It is not simply about following orders or turning up on time. It is about doing the right thing consistently, particularly when conditions are difficult and nobody is watching.
It means preparing thoroughly. It means understanding your role within a team. It means remaining calm under pressure and taking responsibility when things do not go according to plan.
Those qualities transfer directly into professional kitchens.
A kitchen during a busy service can be demanding. Menus need to be delivered accurately, timings have to be managed, food safety standards must be maintained and every member of the team needs to understand what is expected of them. There is very little room for complacency.
The experience I gained as a Royal Marine gave me a strong foundation for handling those pressures. It taught me to be dependable, focused and practical. Most importantly, it taught me that a team performs at its best when everyone understands the standard and works together to achieve it.
That is the foundation of The Gourmet Nomads.
Fifteen years at the head of the kitchen
Over the past 15 years as a head chef, I have worked across a wide range of culinary environments. My experience has taken me from high cuisine and carefully executed menus to the detail and theatre of silver service.
Each setting has its own expectations, but the fundamentals remain remarkably similar.
Fine dining requires precision. Silver service requires timing, presentation and an understanding of the guest experience. High-volume catering requires organisation, consistency and control. Care home catering requires thoughtfulness, nutritional awareness and a genuine understanding of the people being served.
Good food is always important, but professional catering involves much more than recipes and presentation.
It involves ordering, stock control, menu planning, staffing, food safety, cost management, communication and leadership. It means knowing how to get the best from a kitchen team while creating an environment where people can work effectively.
A head chef is not simply there to cook. They set the tone for the kitchen, establish the standards and make sure those standards are maintained every day.

From high cuisine to food that genuinely matters
Working in high cuisine teaches you to respect detail.
Every ingredient has a purpose. Every element on the plate needs to be considered. Temperature, texture, seasoning and presentation all matter. The guest may not always know exactly why a dish works, but they can feel the difference when it has been prepared properly.
Silver service teaches a different but equally valuable lesson: hospitality is about people.
The food is important, but so are the surroundings, the timing and the way the service is delivered. Guests should feel looked after. They should feel that the team is organised, attentive and confident.
These experiences have influenced the way I approach every type of catering.
At The Gourmet Nomads, we do not believe that quality belongs only in fine-dining restaurants. A care home resident deserves food that is appetising, well prepared and presented with dignity. A pub needs a kitchen that delivers a dependable menu day after day. A private client should be able to enjoy their event without worrying about whether the food and service are under control.

Why I started The Gourmet Nomads
I started The Gourmet Nomads because I saw a need for practical, experienced chef support that genuinely delivers.
Many businesses do not need a permanent recruitment process or a long-term consultancy arrangement. They may need a skilled relief chef while a team member is away, an experienced head chef to stabilise a kitchen, or additional support during a particularly busy period.
Other clients need a complete catering solution for a wedding, private gathering or special event. They need someone who understands the occasion, can create a suitable menu and has the experience to deliver it calmly and professionally.
That is where we come in.

In hospitality, reliability is not an optional extra. It is part of the product.
A venue needs to know that its chef will arrive prepared, understand the brief and work to the required standard. A care home needs confidence that meals will be delivered consistently and with consideration. An event organiser needs to know that the kitchen is in safe hands.
This is particularly important when a chef is brought into an unfamiliar environment.
A relief chef has to adapt quickly. They need to understand the kitchen, the equipment, the menu, the team and the expectations of the client. They must be able to identify priorities without creating unnecessary disruption.
That requires experience and emotional intelligence as well as technical ability.
The best chef support is not about arriving and trying to prove how much you know. It is about listening, assessing the situation and making a positive difference. Sometimes that means leading from the front. Sometimes it means quietly supporting an existing team. Often, it means doing whatever is needed to keep service running smoothly.
